ABC: Emergency Blender Cupcakes


I fully intended to bake these cupcakes during the weekend but other things came up (hubby and kids getting the flu) that I had to postpone making these for a couple of days.  Thankfully, these Emergency Blender Cupcakes from Abby Dodge's The Weekend Baker and the ABC recipe for the month of March was super easy to make!  Wow, I don't think I've ever made cupcakes this quick and using only a wire whisk for mixing!

Having no time to make the fudge icing and having too much a lot of cream cheese in my fridge, I decided to turn these cupcakes into black bottom cupcakes instead which was such a great idea because it's such a delicious combination!  I just love the tartness of the cream cheese paired with chocolate...well I just love anything with cream cheese in it!  I think a lot of other flavors can even be infused in the cream cheese to give the cupcakes more oomph like coffee, dulce de leche, strawberries, etc.



For the simple technique required in whipping these cupcakes up, it sure resulted in such an intensely chocolaty and moist cupcake!  I was kinda expecting that they would have the same density as muffins (as they're made like muffins and look like muffin batter) but it isn't this way at all.  I think this could even be turned into a layer cake and topped with your favorite frosting and people wouldn't believe how easy it was to make.  


The cream cheese filling was easy to make too.  I creamed 8 ounces of the cheese with 1/3 cup sugar until smooth then folded in about 2 ounces of chocolate chips in the mixture.


I was only able to make 11 cupcakes even after carefully measuring the batter into each of the cups.


I used a small ice cream scoop for the cream cheese filling.

So soft and moist and intensely chocolaty!


My son Cameron was the first one to taste this.  Isn't it obvious that he loved it?!

VERDICT:  These cupcakes really live up to their name.  Whenever an emergency situation comes up where you're in need of something to serve your guests (after a chiffon or genoise cake malfunction for instance), or have forgotten to make something for a potluck at the last minute or just in need of a chocolate fix, this recipe is it!  Truly the holy grail recipe for uber busy people.

  4. What a great idea, Janis. I love cheesecake brownies and have no doubt this is equally delicious. As for your little boy, he is just adorable!!! I want to pinch his cheeks :o)
